  • Cut potato into 1/4-inch-thick sticks. For crispier fries, soak potato sticks in cold water at least 1 hour or up to overnight.

  • If soaked, drain potato sticks, and pat dry. Toss together potato sticks, oil, rosemary, salt, and pepper in a large bowl. Lightly coat fry basket of an (3.4 qt.) air fryer with cooking spray. Arrange half of the potato sticks in an even layer in basket and cook at 380°F until browned and crisp, about 20 minutes, tossing every 5 minutes. Repeat with remaining potato sticks. Serve immediately.
